Salmon Kebabs with Sweet Chilli & Lime Dip

INGREDIENTS

  • 4 tbsp sweet chilli sauce
  • Juice of 1 lime
  • 4 x 140g/5oz Skinless salmon fillet, cut into large chunks
  • Oil, for drizzling
  • Salt, if needed

 

METHOD

STEP 1: Mix the sweet chilli sauce with the lime juice in a bowl. Pour half of the mixture into a serving bowl, to be used as a dip.

 

STEP 2: Put the salmon on 4 skewers and brush with the remaining chilli sauce. Marinate for 20 minutes.

 

STEP 3: Shake off any excess marinade from the kebabs, drizzle with oil, season and grill for 8 minutes, turning occasionally, until the salmon is cooked. Serve hot with the dipping sauce.
