Date & Dried Fig Energy Balls

Ingredients:

● 12 dates, soaked in hot water for 10 minutes, pitted
● 4 dried fig, soaked in hot water for 10 minutes
● 4 tbsp oats
● 2 tsp cocoa powder, unsweetened
● 25 hazelnuts
● 25 almonds
● 2 tbsp peanut butter, (no sugar added)
● ½ cup desiccated coconut powder
*For 20 serving (4 serving=1 portion)

Instructions:

1. Put hazelnuts, almonds, oats and cocoa powder in a food processor. Pulse until they turn a small particules. Set aside.
2. Pulse the soaked and drained fig and dates until they reach sticky paste consistency.
3. Add the date and fig paste, and peanut butter to the nuts mixture, mix them well.
4. Knead until it reaches the non-sticky dough consistency.
5. Take small pieces from this mixture and form a ball in your palms. Put the balls you rolled into the coconut powder bowl to cover them in the coconut powder. You can store your energy balls for a week in a refrigerator.
