Lime & Yogurt Marinated Chicken

Ingredients:

  • 1 chicken leg thigh (160-180 g)
  • ⅓ cup greek yogurt
  • 1 tbsp olive oil
  • ½ lime zest and juice
  • 1 garlic cloves
  • 2 sprigs of fresh thyme
  • Salt
  • Pepper
  • ½ cup cooked rice

*for 1 serving

 

Instructions:

  1. Whisk the yogurt, lime juice, and zest, garlic, fresh thyme, olive oil, salt, and pepper in a mixing bowl.
  2. Put the chicken into the bowl and close the lid. Marinate for a minimum of an hour in the refrigerator.
  3. Put the chicken in an air-fryer basket. Air-fry for about 26 mins in the air-fryer at 180°C/355°F, and turn the chicken through halfway.
  4. Serve with microwave rice.
