Savory Zucchini Muffins

Ingredients:

● 1 medium egg
● 1 large zucchini (360 g), grated
● 1 ½ tbsp plain yogurt
● 1 tbsp olive oil
● ½ tsp garlic puree
● ½ cup oat
● 1 tbsp feta cheese
● 1 tsp baking powder
● 4 sprigs of dill, chopped
● 6 leaves of fresh mint, chopped
● Salt
● Black pepper
● 3 tbsp parmesan
● 1/2 tbsp mix of sesame and black sesame seeds
*for 6 servings

Instructions:

1. Mix the grated zucchinis, plain yogurt, egg, olive oil and garlic puree in a large mixing bowl.
2. Add the oats, feta cheese, chopped dill and mint, baking powder, salt, and pepper to the bowl. Mix until all the ingredients become together.
3. Scoop the dough and place on lined with muffin liners or greased muffin tin.
4. Sprinkle the parmesan cheese, and sesame and black sesame seeds on top. Bake the zucchini muffins in preheated oven at 375ºF/190ºC for about 35 minutes. Serve them when the muffins are slightly cold.
