Swiss steak is a dish of meat, usually beef, that is swissed by rolling or pounding before being braised in a cooking pot of stewed vegetables and seasonings. It is often served with gravy. It is made either on a stove or in an oven, and does not get its name from Switzerland, as the name suggests, but the technique of tenderizing by pounding or rolling called “swissing”.

Swiss Steak
3-1/2” THICK ROUND STEAKS
SALT
PEPPER
SELF-RISING FLOUR
CORN OIL
1 BELL PEPPER (CHOP MED. CHUNKS)
1 LG. ONION (CHOP MED. CHUNKS)
3 CLOVES OF GARLIC (SLICED)
1-14.5 OZ. CAN DICED TOMATOES
WORCESTERSHIRE SAUCE
ONION POWDER
BADIA ROASTED GARLIC POWDER
PAPRIKA
STEAK SEASONING (I USE WEBER STEAK N CHOP)
2 1/2 CUPS BEEF STOCK OR USE A BEEF BOUILLON MIXED IN WATER TO MAKE 2 1/2 CUPS STOCK

Swiss Steak
3-1/2” THICK ROUND STEAKS
SALT
PEPPER

1 LG. ONION (CHOP MED. CHUNKS)
3 CLOVES OF GARLIC (SLICED)
1-14.5 OZ. CAN DICED TOMATOES

STEAK SEASONING (I USE WEBER STEAK N CHOP)
2 1/2 CUPS BEEF STOCK OR USE A BEEF BOUILLON MIXED IN WATER TO MAKE 2 1/2 CUPS STOCK
Set out the beef for at least 30 minutes before tenderizing. To tenderize: sprinkle with salt and pepper on both sides and lightly dredge in flour. Trim off perimeter fat (so that beef can flatten around edges). Beat very well on both sides until beef begins to break down and flatten. After all, three are tenderized-cut in half. Batter with self-rising flour and brown well on both sides in a pre-heated skillet with oil. Take meat out and add chopped onion and pepper and cook about 3-4 minutes. Add beef back to skillet and sprinkle with all spices and add sauces, tomatoes, and stock. Cover and cook on low for two hours. Serve with mashed potatoes and peas or a vegetable of your choice.
OPTION: Can brown and cook in a Dutch oven and once all items are added slide into a 350 deg. Oven for 2 hours.
OPTION: Can add the browned meat and sautéed veggies along with other ingredients in a baking dish and cover tight with foil and bake at 350 deg. For 2 hours.
CROCKPOT: Prepare meat and veggies then add to a crockpot with remaining ingredients. Cook on low for 8 hours or high for 4 hours.

It did look pretty and delicious. I am making some tomorrow. I have some little steaks call sirloin sizzlers. I used them for steak and eggs and to make philly steaks. I think they will do allright. I wish I had some english peas. I might pick some up as I have to go out tomorrow. I am going to make buscuits or use a couple of fozen yeast rolls. So good to dip the gravy. And I want my husband to make some good sweet tea. His is better than mine. Ok now can't wait for tomorrow. I am also making some apple fritters one day this week. Yum!!

When I was younger I remember getting cube steak in a bucket and we called it bucket steak. And my grandmother would take the side of the saucer and beat the bucket steak to make it more tender and I thought she was going to break that plate but she didn't

O Tammy! I am diabetic, but I can SURE have the swiss steak part of this meal. Just have to substitute some low-carb veggies😉 Have NO doubts about it, I will be buying a nice round steak soon! And I'll pound them myself like you said is best🙂

My Mom used cube steak, and it tasted great. But now I want to try round steak, since I recently got a mallet for flattening some chicken breast. I have yet to use the tenderizer side. This seems to be an opportunity to do so. I grew up with Southern cooks, and have picked up many techniques and styles. I've spoiled my wife with all the recipes I find.
