Our microwave mug omelette takes five minutes, two eggs and a microwave. It’s possibly the easiest omelette recipe you’ll ever use and is also packed with protein and flavour.
In fact, this microwave mug omelette recipe has only three main ingredients – eggs, milk and cheese – and if you’ve run out of milk it’s not a disaster! Adding milk to this recipe keeps your mug omelette super fluffy and light, as does covering the bowl with a paper towel in the microwave.
We’ve added pepper, cheddar and fresh parsley to ensure that this healthy omelette doesn’t scrimp on flavour either.

Eggs are a cheap and nutritious food, but not all eggs are made equal. The type of egg you use for this healthy breakfast omelette really matters.
Buying a carton of free-range eggs means the hens that laid them have been allowed to roam freely whilst eating a natural and nutrient rich diet. In turn, this means your egg can contain between three to six times more vitamin D than a battery farm egg.
It’s helpful to be aware of the various classifications of egg quality, particularly the subtle difference between free-range and cage-free eggs. So, to make our truly cracking microwave mug omelette even better, pick the best quality eggs you can access!

- 2 eggs
- 2 tbsp milk (dairy, rice or soy unsugared)
- 1.5 oz cheddar cheese (grated, could also be 3 oz)
- ¼ tsp salt
- 2 tbsp red bell pepper (diced, plus more for topping)
- ½ tbsp parsley (chopped)
- Black pepper to taste
In a big microwavable cup whip eggs until there are no streaks of white or yolk left.
Fold in half of the grated cheese, milk and ¼ tsp salt and 2 tbsp diced peppers.
2 tbsp milk, 1.5 oz cheddar cheese, ¼ tsp salt, 2 tbsp red bell pepper
Cover the cup with a paper towel.
Bake in the microwave of 700 watts for 3 minutes, if necessary add another 15 seconds. The top should never be dry (this means overcooked).
Serve omelette topped with fresh red peppers, chopped parsley, salt and fresh black pepper to taste
