Cook time for pork dinner 35 to 40 mins
Ingredients
3 Tbsp olive oil
2.5 pounds chopped pork butt (Carnitas cuts work great)
1 onion
1 red and green bell pepper
1 Tbsp Mexican oregano
1Tbsp Guajillo chili powder
1 Tbsp onion powder
1 tsp ground cumin
1 tsp black pepper
6 garlic cloves
1/2 Tbsp Maldon sea salt flakes (to taste)
2 cups chicken broth + juice of a lemon
Small bunch cilantro
Small sweet tomatoes (flavor bombs sweet tomatoes)

Pressure cooker cilantro lime rice
Cook at rice setting (12mins)
2 cups basmati rice
2 cups water
2 tbsp lime (or lemon)
1 tsp Maldon sea salt flakes

    Update: Everyone I made this dish. My cook time was a little longer because I have an electric stove but baby! This was ABSOLUTELY EVERYTHING! I intended on cooking it the day I seasoned it but life happened and it marinated for 2 days and I was afraid. It was so worth it. So flavorful. So delicious, hearty and light. I was not a fan of the tomato. But everything else ?
